My hubs’ truck broke down last week and as a result, I was unable to go grocery shopping, and I was left with trying to figure out creative ways to use up what we had in our home.
I have never been a huge fan of Hot Pockets, they always tasted weird to me but when I found this recipe on Money Saving Mom, I knew I had to give it a whirl because my boys would love it and I loved that it was homemade.
Thankfully, I ended up loving it too. This recipe is super easy, kid-friendly, and best of all FREEZER friendly! You can freeze any leftover batches for another day which is perfect for those busy fall weekends when you do not have time to fix lunch!
- 3 cups flour
- 4 Tablespoons dry milk (I substituted liquid milk for this and it did fine. It was sticky due to the extra liquid but the taste and texture were perfectly fine.)
- 3 1/2 Tablespoons sugar
- 1 teaspoon salt
- 2 Tablespoons yeast
- 1 cup warm water
- Sliced ham
- Shredded or sliced cheese
Using a Bread Machine: Combine ingredients in the bread machine in the order listed and run the dough cycle. Check halfway through to see if you need to add a little extra water or flour to make soft dough.
By Hand: Dissolve yeast in warm water. Stir in salt, sugar, and dry milk. Add flour and stir until dough pulls away from the sides of the bowl. Dump dough onto a floured surface and knead for around 5 minutes, until a soft dough forms. Add a little more flour, if needed.
To make Ham & Cheese Pockets: Divide dough into 10-14 balls. Roll or hand-pat each ball into a rectangle. Put ham and cheese on half of the rectangle. Fold dough over and pinch sides to seal tightly.
Bake Pockets on a greased cookie sheet at 350-degrees for 15-18 minutes, until lightly browned.
Freeze: Let cool completely. Freeze in airtight, zip-top freezer bags for up to 2-3 months.
Serve: Remove desired number of hot pockets from the freezer and heat them individually in the microwave for about two minutes or until heated through, or warm on a cookie sheet in oven at 350-degrees for 20 minutes, or until heated through.
