Is your husband a buffalo chicken nut? I swear, my hubs would eat buffalo chicken wings for dinner every single night if he was not married to me. The problem has always been that the wings are either too spicy to feed to our boys or due to the bones in the chicken wings, we have to spend a lot of time shredding the meat off the bone just for our boys to enjoy daddy’s favorite meal. Not to mention all the time it takes to deep fry them and the fact that they are not the most healthy of food options.
Thankfully, on our clean eating meal *came a recipe for Boneless Buffalo Chicken Nuggets and man, are they good. I was really nervous about making them since my hubs is such a crazy freak over buffalo chicken and I did not want to mess up one of his favorite food groups. However, this recipe was super easy to make, super delicious and our boys L-O-V-E-D it. Oh and so did the hubs! 🙂
This recipe also comes with an amazing blue cheese sauce. My hubs was not a fan of it since it using Greek yogurt and he does not like “that weird stuff”, but the boys and I loved it. In fact, I am sure Collin would have eaten the whole batch had I let him!
Buffalo Chicken Nuggets with Blue Cheese Sauce
Ingredients
3 boneless, skinless chicken breasts, cut into 2-inch chunks
3 large eggs, lightly beaten
1½ cups whole-wheat flour
⅓ cup hot sauce
¼ cup butter, melted
¾ cup plain Greek yogurt
⅓ cup crumbled blue cheese
2 tablespoons 2% reduced-fat milk
Directions
Preheat oven to 400°F. Toss chicken pieces and beaten eggs in a large bowl. Place flour in a large zip-top plastic bag. Add chicken pieces to flour; seal and shake well to coat. Place chicken in one layer on a baking rack coated with cooking spray on a foil-lined pan. Coat chicken with cooking spray. Bake 18 to 20 minutes or until chicken is done. Combine hot sauce and butter; drizzle over chicken. Stir together yogurt, blue cheese and milk; serve with chicken nuggets.
