If you’re like me and have been looking for an easy-to-make and healthy pancake mix recipe, this is the one for you! I adapted this recipe from the cookbook, 100 Days of Real Food* and it makes not only amazing whole-wheat pancakes but delicious waffles if you own a waffle iron.
One of the big reasons why I love this recipe is that it does not contain any sugar (uses honey instead) and super tasty despite being made with whole wheat flour.
If you shop at Aldi, make sure you grab their 100% Pure Maple Syrup while you’re there….it’s awesome and it doesn’t contain all the bad stuff like high fructose corn syrup like many other brands do. You can even mix in mashed up bananas, chopped nuts, chocolate chips, or pureed pumpkin (or use the canned kind from my Whole Wheat Pumpkin Muffins recipe) for even tastier treat.
Just fold in those extra ingredients after you’ve completed step two. Be careful not to over mix.


- 2 cups whole-wheat flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 tablespoon honey
- 2 large eggs, lightly beaten
- 1 3/4 cups milk
- 2 tablespoons butter, melted (plus extra for frying)
- 100% pure maple syrup, for serving
- Optional: bananas (mashed), pureed pumpkin, chopped nuts, chocolate chips
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Make a well, or hole, in the center of the flour mixture and pour in the honey, eggs, milk, and melted butter. Whisk together thoroughly until just combined. Do not over mix.
- Heat griddle to 350 degrees or a saute pan over medium heat. Swirl enough butter around the pan until it is well coated. Using a spoon or ladle, add one spoonful of batter per pancake. After several minutes, when the pancakes have begun browning on the bottom, flip and cook the other side. Transfer the pancakes to a plate and repeat until no batter remains.

Wow, this is great, looks super delicious. When I grew up, we had a tradition to have pancakes every Sunday morning at home. I think I need to start my own tradition with pancakes as well 🙂
I’ve been looking for a new pancake recipe to try, and I’m all for whole wheat flour. My husband, other hand,may not be. I’ll try to sneak it by him.
