Nothing says summertime in our family like homemade chicken salad! And being that we like to eat a relatively clean diet, I prefer to not use mayonnaise in our chicken salad. So, this recipe contains sour cream instead!
This chicken salad recipe is super versatile – you can toss it on top of lettuce for a salad or make wraps for lunch! My kids love having chicken salad sandwiches especially when we’re out on the boat or camping! It’s the perfect outdoor lunch on a hot Georgia day!
If you’re looking for some substitutions, you can easily sub out the dried minced onion in this recipe for green onions or just chop up a regular onion. The only reason I use the dried minced onion is that I don’t always have green onions on hand and regular onions tend to make the salad messier. Also, instead of using the chopped pickles, you could easily sub in relish.
You could even add in some chopped celery if you have any! For the chicken, I like to use leftover shredded chicken. I like to roast a whole chicken and any meat that is leftover I shred using my stand mixer and then save for later. Then I make homemade chicken stock from the chicken carcass. So good!

HOMEMADE CHICKEN SALAD
- 2 cups shredded chicken
- 2 tsp dried dill
- 1 – 1 1/2 tsp (depending on taste preference) dried minced onion
- 1 – 2 kosher dill pickles, chopped
- 1/2 tsp salt to taste
- 1/2 tsp black pepper
- 1/4 tsp garlic powder to taste
- 1/2 cup sour cream
- 1 TB dijon mustard
- Mix chicken, pickles, dill, salt, pepper, onion, and garlic powder together in a bowl.
- In a small bowl, mix together the sour cream and dijon mustard.
- Then using a fork, mix together the sour cream mixture with the chicken mixture.
- Serve as sandwiches, on top of salads, inside wraps, or use it as a dip for crackers! Store leftovers in an airtight container in the fridge.
